Air Fryer Costco Chicken Bake Copycat

Now we make the Costco Chicken Bake rolls at home and so can you! With just a few ingredients and 20 minutes of time, you can prepare a meal where everyone will be asking for more!

A family favorite when we stop for lunch while shopping at Costco is their Chicken Bake rolls.  The Chicken Bake rolls is a combination of bacon, chicken and a creamy dressing packed into a pizza roll.  Every bite is a taste treat!

Wait! I can make these Costco Chicken Bakes at home?!

Yes! Now we make the Costco Chicken Bake rolls at home and so can you!  With just a few ingredients and 20 minutes of time, you can prepare a meal where everyone will be asking for more!  Just a few of the benefits of making the Chicken Bake rolls at home is 1) no standing in line; 2) no membership needed; 3) you can add or change the ingredients to what you have on hand; and, 4) it is such an easy meal that it can be taken to work for lunch, given to the kids for their lunch at school, and even while you are out running errands!

Can this recipe be multiplied?

Absolutely! If you are having a large crowd over, this recipe can be doubled, tripled, even quadrupled so there will be plenty for everyone!  The Chicken Bake rolls can also be made ahead of time and frozen until you are ready to use them. So, you are prepared for unexpected company, and also to be ready for parties when you’ve made the Chicken Bakes ahead of time.

Variations:

One of the great things about the Chicken Bake roll is that you can use whatever items you have on hand.  Also, you can add items if you should choose to do so.  Here are just a few ideas:

Pizza dough – You can use your own recipe for the pizza dough.  If you’re in a hurry, Pillsbury pizza crust or bread dough are options.  Trader Joe’s has a great garlic and herb pizza dough that will add even more flavor.

Chicken – in a hurry?  Pick up a rotisserie chicken to use, or use any leftover chicken you have on hand from another meal.

Not a fan of chicken?  Substitute chicken with salami or pepperoni.

No Caesar dressing available?  Try ranch dressing or Alfredo sauce for a slightly different flavor.

Additions:  Peas, carrots, mushroom, celery or chopped onion would make great additions.

Can I freeze my Costco Chicken Bakes?

Absolutely!!  Let your cooked chicken bake rolls cool completely, then place the chicken bake rolls on a cookie sheet lined with parchment paper.  Put these in the freezer until the rolls are completely frozen, then remove and put them in freezer safe bags until ready to use.

Thaw overnight in the refrigerator, then reheat for 5 minutes at 350 degrees in the air fryer.

To freeze Chicken Bake rolls before cooking, follow the same steps for freezing, and thaw overnight in the refrigerator.

Place the rolls in the air fryer basket and bake at 350 degrees  for 5 minutes.  Top the rolls with the topping and bake for 2-3 minutes longer (until the topping has melted).  Remove the rolls from the air fryer and let cool before eating.

TIP:  It’s preferable to reheat the chicken bake rolls in an air fryer or in the oven and NOT in the microwave, as the rolls tend to become soggy if reheated that way.

Help! I don’t have an Air Fryer!

Not a problem.  The chicken bake rolls can be baked in the conventional oven.  Preheat the oven to 400 degrees, place the rolls on parchment paper on a cookie sheet and bake for 15-18 minutes.  Let the rolls cool 5-10 minutes before serving.

Ingredients:

Bacon – cooked and chopped finely. Feel free to add more if you’re feeling dangerous!

Chicken – cooked and chopped – great way to use leftover chicken from another meal.

Caesar Dressing – this can be your own recipe or your favorite store brand.

Heavy Cream – adds an extra creaminess to this recipe. You can substitute for milk, but I suggest only using whole milk. Otherwise you will lose the flavor for this recipe.

Parmesan Cheese – Fresh parmesan cheese is more flavorful, but if you don’t have fresh, that’s okay.

Mozzarella Cheese – make sure to shred it, or buy pre-shredded.

Garlic (minced) – adds great flavor and blends well with the other flavors.

Pizza Dough – use your own recipe or purchase ready-made (such as Pillsbury’s pizza crust). You can use my pizza dough recipe from this recipe. It will make about 2 lbs so you can keep the measurements, or divide in half.

Parsley – chopped. This is optional as it is garnish.

Add bacon, chicken, 1/3 cup dressing, heavy cream, parmesan, 1 cup mozzarella, garlic and 1 tablespoon parsley to a mixing bowl…

…and combine.

Roll the dough out in a rectangle about 1/4” thick on a lightly floured surface. Cut the dough in 2 rectangles.

Divide and add the filling to each rectangle.

Fold in the sides of the dough and roll the dough tightly closed.

Form the filling to fill the dough evenly into a log. Add the remaining ingredients to a bowl and mix for the topping.

Place the rolls into the air fryer basket and bake at 350°f for 5 minutes. Top the rolls with the topping and bake for 2-3 minutes more until the topping is melted.

Remove the rolls and let cool before eating.

These Costco Chicken Bakes make great leftovers! The Chicken Bakes can be stored for up to 4 days in the refrigerator in an airtight container. These are my favorite glass containers!

As mentioned before, you do not need an Air Fryer for this recipe. You can easily make these in the oven! However, if you are searching for a new air fryer, this is the one our family has! It works well, is an 8 quart with a great size for our family of 4, and has a viewing window.

Instructions
