Air Fryer Starbucks Copycat Kale and Mushroom Egg Bites

These copycat Starbucks Kale and Mushroom Egg Bites are the perfect breakfast whether you’re eating at home, or on the go! Perfect fresh, or to make ahead of time! They are healthy, flavorful, and tastes just like the ones at Starbucks, while saving your pennies!

Why should I make these Starbucks Copycat Kale and Mushroom Egg Bites? They save you money and are convenient!

I love making these egg bites at home because I love knowing what each ingredient is going in my food! But most, I love saving the money! If you get order this at Starbucks, you get 2 for about $4.50! Yikes! You will spend just about that amount to make this recipe!

I get it, the drive through is convenient. But did you know these egg bites freeze amazingly? After you cook these up, you can easily freeze them… IF there are any leftovers. Make sure that your bites cool, and then place them in a freezer safe bag like this one:

If they are in the freezer, pull them out the night before and thaw in the fridge. You can reheat in the microwave for 1 minute to 1 1/2 minutes from the refrigerator.

I don’t have an Air Fryer! Can I still make these Starbucks Copycat Kale and Mushroom Egg Bites?

No Air Fryer? No problem! Follow all the steps for the recipe as you would, but instead of placing your chicken in the Air Fryer, place it on a cooking sheet in the oven for 15-20 minutes at 350 F, or until the internal temperature reaches 160°.

Don’t like mushroom, kale, or both?

No problem! I love how versatile this recipe is. You can omit one or the other, or both, and just replace with another preferred ingredient. Suggestions are:

  • Bacon
  • Ham
  • Spinach
  • Red Bell Pepper
  • And more!

Ingredients

Fresh kale – It’s best to use fresh instead of frozen so it doesn’t get soggy.

White Mushrooms – I used white mushrooms for my recipe, but any type will do!

Eggs – I prefer organic eggs as they tend to be lighter and fluffier. But you can use any you like. I suggest using large eggs.

Gruyere Cheese

Minced Garlic

Cream Cheese

Sour Cream

Salt and pepper

Pre-heat the air fryer to 300°f. Rinse kale and chop by removing the leaves from the spine and chopping it into small bits. Set aside.

Rinse and dice the mushrooms. Set aside.

Add the remaining ingredients, minus 1 oz of gruyere, to a food processor…

… and blend until smooth and creamy.

Pour equally into 6 silicone muffin liners sprayed with oil.

Grab a pinch of kale and push it down into the egg mixture. Do the same with the mushrooms.

Sprinkle the remaining Gruyère on the egg bite. Cook at 300°f for 8-10 minutes.

Let the egg bites cool to the touch before removing them and eating them.

Items I used to make my Starbucks Copycat Kale and Mushroom Egg Bites!

As mentioned before, you do not need an Air Fryer for this recipe. However, if you are searching for a new air fryer, this is the one our family has! It works well, is an 8 quart with a great size for our family of 4, and has a viewing window. 

This is the food processor I used, but any blender will work too!

If you only have a blender, that will do the job as well! This is my favorite blender!

These are the silicone muffin liners that I used to make these egg bites! I like them because they make the egg bites larger.

But if you prefer smaller ones, these work too!

Ingredients
  

  • 1 cup fresh kale chopped
  • 1/4 cup white mushrooms diced
  • 6 eggs large
  • 1 cup Gruyère cheese shredded
  • 2 teaspoons minced garlic
  • 2 oz cream cheese softened
  • 1/4 cup sour cream
  • Salt and pepper to taste 1/4 teaspoon each

Instructions
