Air Fryer Chicken Fajitas

These air fryer chicken fajitas are perfect for a busy weeknight! It only takes 20 minutes to have dinner ready! 

We love any type of Mexican meals in our home, so fajitas are always on the menu. Cooking with the air fryer means the chicken is moist and tender, the bell peppers and onion are crispy, and the fajitas are exploding with flavor!  Cooking with the air fryer also means your meal is ready sooner, and there is very little cleanup!

What do you top your Air Fryer Chicken Fajitas with?

Toppings for the air fryer chicken fajitas could include crumbled cotija cheese, shredded jack cheese, a dollop of sour cream (or Greek yogurt for a healthier alternative), chopped cilantro, salsa, pico de Gallo, sliced avocado or guacamole. The list is endless!

Don’t have chicken? No problem!

Other options for fajitas can include substituting steak, shrimp, or even pork for the chicken.  Fajitas are also very tasty when using veggies without including a meat – just add more onions and bell peppers than the recipe calls for!

I don’t have an Air Fryer! Can I still make these Air Fryer Chicken Fajitas?

Yes!  Two options for making fajitas are to cook on the stove top or in a slow cooker:

Stove Top

Heat the oil in a large skillet (we prefer cast iron for searing) over medium-high heat.  Add the chicken, bell peppers, and the onion to the pan.  Cook the chicken until it is browned (5-10 minutes) and there is no pink color in the meat.  Add the fajita seasoning to the pan, mix well, and cook for another 2-3 minutes.  Serve immediately!

Slow Cooker

Add all the ingredients together in the slow cooker and mix well.  Cover and cook on high for 1-3 hours, or on low for 3-4 hours.  Turn off the slow cooker when you are finished cooking so the chicken won’t dry out.  Enjoy!

Do Chicken Fajitas make good leftovers?

Yes! Sometimes we make extra just for leftovers! Warm them up, and place them in a warmed tortilla. Then top with your toppings! Fajitas can be stored for up to 4 days in the refrigerator in an airtight container. These are my favorite glass containers!

Here are a couple of great low-carb options!

The air fryer chicken fajitas are low carb, low fat, great when you’re on a keto plan, and you know you have the best flavor!

Lettuce wraps – instead of tortillas, use butter lettuce leaves and place warmed fajita mix into the lettuce leaves.

Fajita salad – Spoon fajita mix over a bed of lettuce.  Add cherry tomatoes or diced tomatoes, and serve with your favorite dressing.

Can this recipe be made ahead of time?

Yes!  After making the fajitas, let them cool and then place in an airtight container (see below) or in a heavy-duty storage bag and place in the refrigerator for up to 4 days.  Reheat on the stove, in the microwave, or in the air fryer.

Ingredients:

Chicken breasts – we prefer to use breast meat, but boneless thighs will also work. As mentioned before, you can substitute steak, shrimp, or even pork for the chicken.  Fajitas are also very tasty when using veggies without including a meat – just add more onions and bell peppers than the recipe calls for!

Bell peppers – any variety will do for this recipe!

Purple onion – provides a spicy-to-mild flavor as well as adding nutrients.  A white onion can be substituted too. Our family likes the sweetness the purple onion gives with the bell peppers.

Olive Oil – I use olive oil, but vegetable oil can be substituted if that is what you have.

Fajita seasoning – use your favorite store brand seasoning or make your own!

Flour tortillas – You can substitute flour tortillas with corn, lettuce, or omit entirely and throw your chicken fajitas over a bed of lettuce!

Crumbled cotija cheese – mild and tangy flavor; shredded jack cheese is also very good. These are our favorite options for chicken fajitas.

Sour cream – optional, but I personally can’t get enough! LOL!

Chopped cilantro – adds a bright, lemony and peppery flavor. Brings out all the flavors! Yum!

Place chicken, peppers and onions into a mixing bowl…

…coat with 4 tablespoons oil and season with 4 tablespoons of fajita seasoning.

Add the fajitas to the air fryer basket without over filling. You can crowd the basket but don’t pile the fajitas too, you can cook in batches. Cook each batch for 10 minutes.

Remove and let rest for a couple of minutes.

Warm the tortillas and add a spread of sour cream.

Add the fajitas…

… and top with cheese and cilantro.

Ingredients
  

  • 1.5 lbs chicken breast sliced
  • 2 bell peppers sliced into thin strips, any color
  • 1 purple onion sliced thinly
  • 4 tbsp olive oil
  • 4 tbsp fajita seasoning
  • 8 6 inch flour tortillas

Garnish:

  • Crumbled cotija cheese or shredded jack cheese
  • Sour cream
  • Diced cilantro

Instructions
 

  • Pre-heat the air fryer at 400ºf.
  • Place chicken, peppers and onions into a mixing bowl, coat with 4 tablespoons oil and season with 4 tablespoons of fajita seasoning. Add the fajitas to the air fryer basket without over filling. You can crowd the basket but don’t pile the fajitas too, you can cook in batches.
  • Cook each batch for 10 minutes.
  • Remove and let rest for a couple of minutes.
  • Warm the tortillas and add a spread of sour cream. Add the fajitas, and top with cheese and cilantro.
