Mickey Mouse Cake Pops

Using just a few ingredients with this easy recipe, you can create your own Mickey Mouse cake pops at home!

Yummy chocolate cake mixed with frosting on the inside, covered with chocolate on the outside, then dipped in melted chocolate that has been dyed red, ears added for the mouse effect, and the look completed with little dabs of yellow for Mickey’s buttons.  Perfect, just perfect!  This recipe yields 15 yummy bite-sized snacks on a stick!  So, any time your child wants a cake pop, or your sweet tooth is calling, you will be ready! Because they take less than 30 minutes to make, this special treat can be available to make any day of the week special!

These delightful desserts are great for home and for a child’s birthday party, but you could even use these for a baby shower, simply by changing the colors to pink or blue.

What are cake pops?

Cake pops have been around for a few years, and have become very popular at Starbucks and other coffee shops.  Cake pops are a small, round piece of cake coated with icing or chocolate and fixed on the end of a stick, resembling a lollipop.

Best way to store your cake pops.

The cake pops can be stored at room temperature for up to 5 days, but make sure they are kept away from any heat source.  They can also be refrigerated for up to a week, or frozen up to a month.

To freeze, wrap the cake pops individually, then store them in a freezer-safe container.  Thaw in the refrigerator before serving.

Kitchen tools to have on hand for these cake pops.

A cookie scoop is the best tool to use to make the round cake pops, but if you don’t have one, you can use a melon baller.

Cake pop sticks are perfect for your cake pops, but you can use popsicle sticks if needed.  Your cake pops could even be temporarily placed on toothpicks. However, when I make cake pops for my little ones, I love using reusable sticks.  They save money in the long run!  If you are making them for a party, or as a gift, I suggest paper sticks as they are easy to toss out.

Ingredients:

Cake (prepared) – If life is busy and you don’t have time to make a homemade cake, a box cake works fine for this recipe!  I suggest using Pillsbury or Betty Crocker.  We used chocolate but any flavor such as red velvet, vanilla, funfetti, etc. will work as well. White cake frosting – You can make your own frosting, or canned frosting will work.  I suggest Betty Crocker or Pillsbury brand.

White almond bark – White almond bark is different from chocolate melting wafers, and tends to melt easier and spread smoother. If you find that when you dip your cake pops, the almond bark comes out clumpy, you can add a little more vegetable oil to spread it smoother.

Chocolate melt wafers – These are used for Mickey’s ears. Then melt the remaining amount for his body.

Red food coloring – for Mickey’s “pants”

Yellow food coloring – for Mickey’s “pant buttons”.

Cake pop sticks – Any cake sticks will do, but these linked are my favorite! We love cake pops in our home, and these are reusable! I love when I can save money and reuse supplies.

In a large mixing bowl, add the cake and frosting, and mix well until the cake becomes like firm batter. Form batter into 1 1/2” balls. Set aside. Melt the white almond bark in a bowl using a microwave. Heat 30 seconds at a time until fully melted. Add a splash of oil if needed. Add a few drops of red coloring until you reach fire engine red. Dip the cake pop stick into the melted chocolate about a half inch. Then stick it into the cake ball. Repeat for all the cake balls. Dip cake pops into the red chocolate until fully coated. Place upright in a holder or foam base to allow the chocolate to harden.

Before the chocolate hardens, take two melting wafers and stick them in the cake pop to form Mickey’s ears. Melt the almond bark in a bowl using a microwave. Heat 30 seconds at a time until fully melted. Add a splash of oil if needed.

Dip the hardened cake pops in the melted chocolate covering the ears and half of the cake pop. Leaving the red exposed on the bottom. Melt half a block of white almond bark in a bowl using a microwave. Heat 30 seconds at a time until fully melted. Add a splash of oil if needed. Add a drop of yellow and mix. Once the cake pops have hardened, dab some yellow chocolate between the red and brown chocolate to form yellow buttons using an unused cake pop stick.

Let the cake pops finish hardening and enjoy!

Supplies I used to make my Mickey Mouse Cake Pops!

I used a medium-sized cookie scoop to make my cake pops.  It helped keep them fairly uniform in size. I used this set, specifically the 2 tbsp scoop. If you don’t have one, no problem!  You can use a food scale, or even a measuring spoon.
