Cold Brew Latte Popsicles

Cold brew latte popsicles are the perfect answer on a hot summer’s day!  When you want a caffeine lift, but it’s too hot, even for an iced coffee latte, these latte popsicles are the best!  Layered with cold brew coffee and a layer of sweetness with a caffeine boost, the preparation time is 10 minutes with only 4 ingredients, so it’s easy to always have these treats on hand!

I like to say coffee is my best friend.  That may not be entirely true, but coffee is an integral part of my day.  However, on a hot, sweltering summer day in Texas, even an iced coffee doesn’t feel cool enough, so that’s when I can reach into the freezer and pull out a latte popsicle to enjoy.  They are so cool, so creamy, so sweet and so delicious!  You can serve your latte popsicles as an afternoon treat, enjoy them around the pool, or during a gathering with friends.

Variations:

Add chocolate, hazelnut or caramel syrup to add variety to your latte popsicles.

Try these substitutions!

1 can of unsweetened coconut milk plus 2 Tablespoons maple syrup can be substituted for the heavy cream.

For a paleo, vegan or dairy-free latte popsicle, use almond milk or oat milk instead of the heavy cream.

What if I don’t have a silicone mold?

This recipe comes with a silicone mold. Silicone will help your popsicles pop right out! But muffin tin can be used instead, and if you put the ingredients in a muffin paper, the paper can easily be removed after the latte popsicle has hardened.  A silicone ice cube tray will also work.

What if I don’t have popsicle sticks?

Plastic spoons can be used instead of the popsicle sticks.

Extras!

It’s important your liquid ingredients are cold before assembling to reduce the chance of ice crystals forming after the latte popsicles are frozen.  This will also help the popsicles to freeze faster, too.

If the latte popsicles stick when you want to remove them from the silicone mold, run warm water on the bottom of the mold and then try pushing up from the bottom to release the popsicle.  If that doesn’t work, you can place the popsicle in a small bowl of warm water for 30 seconds to loosen the edges.

Don’t limit yourself to only the latte popsicles!  Use your imagination and your molds to make other popsicles!

These popsicles can also be paleo, vegan or non-dairy!

Ingredients for Frozen Coffee Popsicle.

Ingredients:

  • Ground strong coffee – I prefer strong coffee for the cold brew taste, so this is my preferred brand. But whatever coffee you have on hand will be great!
  • Water – filtered or distilled water is better for this recipe.
  • Heavy cream – this is the heavy cream I used! You can substitute the heavy cream for whole milk, or even a soy or almond milk. But for the cold brew effect, heavy cream is the best!
  • Sugar – any granulated sugar will do. If you are looking for a zero carb, zero sugar option, this would be great!

Add 5 tablespoons sugar and 1/4 cup of heavy cream into the brewed coffee. Place coffee in the fridge to chill for 1-2 hours. Microwave the remaining cream for 30-45 seconds. You want the cream to be warm but not hot. Stir in the remaining sugar.

Add 1 1/2 tablespoons to each slot in the popsicle mold. Divvy remaining cream equally as needed. We use a 10-slot popsicle mold. Place mold in the freezer for 1-2 hours until the cream is frozen.

Once frozen, pour chilled coffee over the cream to fill each slot. Add the top and place sticks in. Freeze for 4-6 hours or until frozen.

Where do I get a posicle mold?

You can get a popsicle mold pretty much anywhere they sell household items! The one I used for this recipe was on amazon! Click here!

This is the heavy cream I used!

Cafe Bustelo is my preferred brand of coffee for these cold brew popsicles! But any coffee you have on hand will be fine too!

Any granulated white sugar will do for this recipe. But here is a great no sugar, no carb alternate!
