If you haven’t tried overnight oats yet, it is basically a no-cook way to make oatmeal. Raw oats are soaked in milk which allow the oats to absorb the liquid and soften them enough to eat uncooked.
Pumpkin spice overnight oats are perfect when you want that autumn feeling, but it’s still too warm outside to eat a hot breakfast, though, if you prefer, the oats can be warmed in the microwave on those chilly mornings. Top with whipped cream, a dollop of Greek yogurt, pumpkin spice and pecans for the perfect garnish. You will probably agree with me – it’s like eating pumpkin pie for breakfast!

Oatmeal is a healthy breakfast option as it is rich in vitamins and minerals, containing 5 grams protein per serving, and 4 grams of fiber which helps you feel fuller longer.
How long do overnight oats last?
Overnight oats can be stored up to 5 days in the refrigerator, so you could prepare once and enjoy all week! Make sure to store them in a mason jar or other airtight container. I prefer to use the small mason jars for storing.
Why does this Pumpkin Spice Overnight Oats recipe have chia and flax seeds?
Both seeds contain a good amount of protein and omega-3 fats, and are excellent vegan sources of phosphorus and many other nutrients. You do need to grind whole flax seeds before you add them to a recipe, but chia seeds can be eaten whole.
What are some fun variations to this recipe?
Fruit – add dried cranberries for a pop of flavor

What if I don’t have Pumpkin Spice in my pantry? Can I make my own?
Of course! If you don’t have pumpkin spice on hand, you can use 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, and a pinch of ground cloves. Mix these together, and then follow the recipe. You will have some leftover to make more!
Ingredients:
Old fashioned oats – It’s best to use old fashioned oats for overnight oatmeal. If you use quick oats, they will come with a mushy consistency if you prepare the night before. However, if quick oats is what you have on hand, you can absolutely use them! Just prepare and allow it to sit for 5 to 10 minutes.
Pumpkin puree – My favorite brand of puree is Libby’s pumpkin puree. Make sure to use 100% pure pumpkin and not pumpkin pie mix.
Brown sugar – granulated sugar can be substituted, but the overall flavor will be slightly milder. I like pairing brown sugar with the pecans and pumpkin pie seasoning. You can also use a sugar substitute if you prefer. You can also omit entirely, or add more if you have a sweet tooth!
Pumpkin Spice – This is my favorite brand!
Vanilla Extract – for the best flavor, use pure vanilla extract.
Flax seeds – you can also use chia seeds! Or you can omit the seeds entirely if you don’t have them, but they are a great way to add extra health benefits.
Pecans – If you have allergies or don’t like pecans, you can omit them. Substitute with peanuts, walnuts or any other nuts you prefer.
Whipped cream or yogurt are great toppers for your overnight oats.
Add ingredients to a sealable container or jar (1/2 cup Whole milk & 1/2 cup Old fashioned oats).

These are the best jars for overnight oats! Wide mouth jars are the best because it is easier to get your spoon in and out when eating. It’s also easier when mixing all of your ingredients together. This recipe is so convenient because you throw everything into your jar, and then eat straight out of it.
