My favorite way to enjoy breakfast is the Chocolate Chip Banana Bread Overnight Oats with a crunchy pecan nut topping.  I love a bowl of hot and steamy oatmeal in the winter, but not in the summer, so I’m glad I found this recipe several years ago.  It’s so quick and easy, requires no cooking, and I can grab my breakfast and start my day.

I’ve never heard of Overnight Oats? What is it?

If you are not familiar with Overnight Oats, this is basically a no-cook way to make oatmeal.  Raw oats are soaked in milk overnight which allow the oats to absorb the liquid and softens them enough to eat uncooked.  Overnight Oats are typically served cold, straight from the refrigerator, and topped with a sprinkling of crunchy granola, fruit, or a dollop of Greek yogurt.

Oatmeal is a healthy breakfast!

Oatmeal is a healthy breakfast option as it is rich in vitamins and minerals and oats are the best ingredients to eat healthy and they are inexpensive to make.  Just one serving of oats provides 5 grams protein and  4 grams of fiber which helps you feel fuller longer and satisfied.

Feeling adventurous? Here are some variations:

As mentioned, my favorite combination is the Chocolate Chip Banana Bread Overnight Oats, but as you try out new combinations you will be sure to find some favorites of your own!

Fruit – bananas, dried fruit, fresh berries or small chunks of apple

Chocolate – try chocolate chips or chop up a small chocolate bar

Nut butter – you may also enjoy Nutella or almond butter

Toppings – crunchy granola, a dollop of Greek yogurt, nuts and seeds such as chopped pecans, almonds or sunflower seeds

Milk – if you prefer, use almond or coconut milk in place of dairy

How long do overnight oats last?

Overnight oats can be stored up to 5 days in the refrigerator, so you could prepare once and enjoy all week!

I prefer to use small mason jars for storing. See below my favorite jars and lids!

Can I multiple this recipe?

Yes! I like to multiply this recipe 5 times in 5 different jars, and prep them Sunday night! Then every morning I can just grab and go on my way to work! Eat them at my desk while I work, or eat them at my kitchen table with my family.

Can you eat overnight oats warm?

Yes! To heat the Chocolate Chip Banana Bread Overnight Oats (or any other combination you try), microwave 45-60 seconds or heat in a saucepan over medium heat until warm.

Ingredients for Chocolate Chip Banana Overnight Oats.

Ingredients:

  • Banana – medium is best for this recipe and its measurements. But you can opt for a large banana if that’s what you have, especially if you love that yummy banana flavor!
“>Vanilla extract – pure vanilla extract is best for this, and any recipe. You will receive a rich flavor with real vanilla extract.
  • Maple syrup – if you don’t have maple syrup, you can substitute with agave syrup. Here is a great agave syrup!
  • Milk – Any type of milk will do great! From whole cow milk to fat free; to dairy free with almond, soy, oat milk, etc. This recipe is so versatile!
  • Old fashioned oats – Best to use old fashioned oats for overnight oatmeal.
  • Flaxseed – you can omit flaxseed if you don’t have it, but it’s a great way to add in extra health benefits! It helps improve digestive health or relieve constipation, as well as lower your total blood cholesterol. Here’s a great article on the benefits of flaxseed! Here is my favorite flaxseed brand!
  • Ground cinnamon – cinnamon is a great seasoning to bring out the flavors in your ingredients. If you don’t like it, or don’t have it on hand, just omit it!
  • Sea salt – you can use regular table salt, or kosher salt too!
  • Mini chocolate chips – regular sized chocolate chips will be great as well.
  • Pecans – you can omit if you have allergies, or if you don’t like pecans. If you don’t have them in your pantry, you can use peanuts, walnuts, or any nut you enjoy!
  • Cutting board with sliced banana.

    The flaxseed I use!

These are the best jars for overnight oats! Wide mouth jars are the best because it is easier to get your spoon in and out when eating. It’s also easier when mixing all of your ingredients together. This recipe is so convenient because you throw everything into your jar, and then eat straight out of it.

I also suggest using these lids. They are plastic which makes them easier to clean, and store. The metal lids are fantastic when you are canning, but not everyday use. Here are some fun colored ones:
