Air Fryer Blueberry Stuffed French Toast

A twist on a favorite breakfast classic, blueberry stuffed French toast is a hit in our home from the youngest to the oldest!

It is quick and easy to make and is perfect for a holiday breakfast, when company is visiting, or to share with your family.  This recipe takes about 15 minutes preparation time and 20 minutes cooking time.

The French toast is made with blueberries, sugar, vanilla, cream cheese, brioche bread and eggs and a surprise ingredient – French Vanilla Coffee Creamer!  After cooking, this sweet, easy to make French toast is garnished with confectioner’s sugar, drizzled with pancake syrup and then topped off with a dollop of whipped cream!  Absolutely decadent!

Using my air fryer for meals makes cooking so quick and easy, and cleanup is a breeze.  Making French toast in the air fryer means I no longer have to stand at the stove or over the griddle turning the French toast a slice or two at a time.  While the French toast is cooking, I can enjoy my favorite cup of coffee!

To complete breakfast, we like to add a side of sausage, bacon, or a slice of ham, as well as hash browns or a fruit salad.

Do I have to use brioche bread?

I prefer brioche bread because it absorbs the French toast mixture without becoming soggy, but feel free to use whatever bread you have on hand. Thicker breads such as Texas toast, French bread or sourdough bread work great!

My French Toast isn’t crispy!

There are two reasons your French toast might not be as crispy as you had hoped.  One, the bread may have soaked too long in the egg mixture.  Two, the french toast may not have cooked long enough.

Can I make this recipe without an Air Fryer?

Of course!  I prefer my air fryer because it is so quick and easy and there is little cleanup, but here are some other ways to make Blueberry Stuffed French Toast.

Griddle – Lightly butter the griddle over medium-high heat.  After soaking the bread in the egg mixture, lay the bread on the griddle and cook about 3-4 minutes on each side.  Your French toast should look golden brown.

Stove top – Butter the pan and heat to medium-high.  When the pan is ready, add the bread that was soaked in the egg mixture to the pan and cook for 3-4 minutes on each side, or until the French toast is a golden brown color.

Oven – Preheat the oven to 350 degrees, than add the bread that has been dipped in the egg mixture. Bake for 10 minutes, turn each slice over, and bake for an additional 5-6 minutes.

If you prefer crispier French toast, heat the oven to 375 degrees.  Bake for 8 minutes, flip the slices of bread and bake an additional 4 minutes.  The edges of the each slice should be crispy.

Can I freeze my French Toast?

Absolutely!  Lay slices of French toast on a cookie sheet covered with parchment paper or Saran Wrap. Make sure the sides of the French toast are not touching.  Put in the freezer until the French toast is frozen (about an hour), then place the slices of French toast into a freezer bag, and freeze for 1-2 months.

When ready to use, thaw the French toast overnight in the refrigerator, then reheat in the air fryer for 2-3 minutes at 300 degrees.

How do I store my leftovers?

Leftovers can be refrigerated for up to 2 days, and then reheated in the air fryer for 2-3 minutes at 300 degrees.

Ingredients:

Blueberries – frozen or thawed

Granulated sugar – coconut sugar can be substituted if you wish 

Vanilla – I use vanilla extract as the pure flavoring in a real extract provides a stronger aroma than using imitation vanilla

Cream cheese – soft cheese made from milk and cream

French vanilla coffee creamer – gives the French toast an extra taste of vanilla with its creamy richness

Brioche Bread – buttery bread that absorbs the egg mixture without becoming soggy

Eggs – provide the special custard texture

Confectioner’s sugar – this finely powdered sugar adds an extra sweetness to the French toast

Pancake syrup – use your family’s favorite to drizzle on top 

Whipped Cream – garnish the top with your favorite canned whipped cream or with Cool Whip

In a saucepan over medium-high heat, add blueberries, granulated sugar, and vanilla. Bring to a boil or until blueberries have burst open. Drop heat to medium-low and allow to simmer for 5 minutes.

Remove and set aside.

In a mixing bowl, add cream cheese, 1/2 cup vanilla creamer, and 1/3 cup of blueberry syrup.

Whisk until fully incorporated and creamy.

Cut the brioche slices in half but not all the way through. Make sure the slices of brioche are dried. This helps prevent soggy toast. You can leave them to air dry for a few hours or toast them in the toaster for 30-45 seconds.

Scooping a spoonful of cream cheese filling, add to the center of the sliced open pocket of the brioche. Gently press the Alice of brioche to fill the whole pocket without squirting the filling out.

In a flat dish, beat the eggs with 1/2 cup of vanilla creamer. Dredge each piece of brioche in the egg wash for 10 seconds on each side. Only dredge the slices you will cook in a batch.

Place the stuffed brioche on pan (or parchment paper) in the air fryer basket and cook at 350°f for 10 minutes, flipping halfway.

Remove toast and let cool. Cream cheese filling will be hot.

Plate the toast and top with remaining blueberry syrup, confectioners sugar, whipped Cream, and or pancake syrup. Enjoy!

Ingredients
  

  • 2 cups of fresh blueberries frozen or thawed

Instructions
