Growing up in Oregon, we would make day trips to Seaside as often as possible. As soon as we parked the car, we could hear the familiar tune of the “Candyman” song from the “Willie Wonka and the Chocolate Factory” movie. Our first stop was at The Candyman store to pick out our treats for the day, always including salt water taffy and of course, lollipops!
These days I can’t always make it back to the coast and the Candyman store, so I have learned to remake those memories in my kitchen.
My daughter loves to have sweet treats, and I wanted to make sure she has treats that are free of dyes and artificial flavors, since we discovered she is allergic to many dyes in foods. These lollipops are the perfect treat and so delicious! They’re great for so many occasions, too – an afternoon snack, treats for a child’s party, or as a gift when a few are bundled together and tied with a ribbon.
Tips:
Make sure you have all your equipment on hand before starting. It takes awhile to heat up, but once it’s at the temp, you need to move quick to not burn your sugar.
Use a candy thermometer that fits securely to the side of the sauce pan.
Ingredients:
- Sugar
- Water
- Corn syrup light
- Cream of tartar
- Strawberry Flavoring – I like this brand of flavoring because it is quite potent, so you can get many uses out of one container!
- Red Watkins natural food Coloring – there are many different types of natural food coloring. It is best to use a liquid rather than a powder food coloring.
In a saucepan, add sugar, water, corn syrup, and cream of tartar. Mix.
Place hook your candy thermometer to the side of your saucepan.
Bring all your ingredients to a boil, Mixing often with a wire whisk.
Continue to whisk until your candy thermometer reaches the temperature 260°F. Add in your strawberry Flavoring and food Coloring. Whisk again.
Remove your saucepan from heat once your thermometer reaches 275°F. Immediately pour the ingredients from your sauce pan and evenly distribute into the cavities in your silicon molds. Make sure to pour over the sticks as well.
Allow them to sit and cool.
Once cooled, pop out and enjoy!
To store, you can individually wrap them in plastic, or dust them in corn-starch and place in an airtight container.
Supplies needed:
- You will need natural food coloring for this recipe. I love Watkins brand for an all-natural, no red dye 40!
2. You will also need strawberry flavor! This is what we used!
3. And of course, you will need this silicone mold – and it come with the lollipop sticks!
4. Finally, you will need a good candy thermometer. I like this one because it clips right to your saucepan!
Strawberry Lollipops
Equipment
- 12 lollipop sticks
- Lollipop mold
- Candy thermometer
Ingredients
- 1 cup sugar granulated
- 6 tablespoons water
- 1/3 cup corn syrup light
- 1 pinch cream of tartar
- 2 drops strawberry Flavoring
- 5 drops red Watkins natural food Coloring
Instructions
- Prepare your lollipop molds by placing it on a flat counter near your saucepan so the transfer is quick. Add your lollipop sticks to your lollipop mold.
- In a saucepan, add you sugar, water, corn syrup, and cream of tartar. Mix.
- Place hook your candy thermometer to the side of your saucepan.
- Bring all your ingredients to a boil, Mixing often with a wire whisk.
- Continue to whisk until your candy thermometer reaches the temperature 260°F. Add in your strawberry Flavoring and food Coloring. Whisk.
